Smokin’ Chipotle Lime Chicken Wings

Sometime I just crave hot wings.

Wings of all flavors…. Spicy Garlic, Asian Zing, or just the traditional Buffalo Sauce. However these Smokin’ Chipotle Lime Chicken Wings may have just become my favorite.  These wings are smokey, spicy, and tangy with just a hit of sticky sweetness.  Everything a girl could want…. In a Chicken Wing that is.

But the best part about these Chicken Wings is you don’t have to drag out the deep fryer and the Peanut Oil. Does anyone else HATE cleaning up the kitchen after frying? Nope there is NO frying involved in making these super easy wings. Instead we are going to roast them in the oven at a VERY high heat and if the weather is nice they are great grilled too 🙂

Easy Breezy and clean up is a snap 🙂 Well….. as long as you don’t get the sauce all over your face.

Chipotle Lime Chicken Wings

Ingredients:

3lbs Chicken Wings

Dry Rub:

1 Tablespoon Chipotle Chili Powder

1½ Teaspoons Smoked Paprika

½ Teaspoon Sweet Paprika

¼ Teaspoon Turmeric

½ Teaspoon Ground Cumin

½ Teaspoon Onion Powder

½ Teaspoon Garlic Powder

1 Teaspoon Salt (to taste)

½ Teaspoon Black Pepper

The Wing Sauce:

2-3 Canned Chipotle Chiles in adobo sauce*

1-2 Tablespoons of the Adobo Sauce

2 Cloves Garlic

2 Tablespoons Honey

1 Large Lime, Zest and Juice

4 Tablespoons of Butter

 

Directions:

Remove the wings from the packaging and pat them completely dry with a paper towel. Then transfer the wings to a large plastic container with a tight-fitting lid.  Add in all the dry rub and toss to coat. Refrigerate the wings for at least 12 hours, and up to 24.

Make The Wing Sauce:

Add all of the ingredients for the “Wing Sauce” except the butter to the bowl of a food processor and puree until smooth.

  • For a Hot sauce add 3 Chipotle Chiles
  • For a Medium sauce add 2 Chipotles Chiles
  • For a Mild sauce add 1 Chipotle Chile

Pre-Heat the oven to 450 degrees.

Line 2 sheet pans with a wire cooling rack and arrange the wings on top. Roast the wings for 35-40 minutes, turning the wings over half way through the cooking process.

While the wings roast melt the 4 tablespoons of butter in a small saucepan. Stir in the wing sauce and simmer over low heat until bubbly and thick.

Once the wings are done add them to a large bowl and toss them with the sauce.

Serve with Ranch dressing and devour immediately.

  1. I love the taste of Chipotle chiles, but for some reason the brand I have available in my area are “over the top” HOT! Even though I love spicy and can handle lots of spicy, the canned ones I have would be 1/4 for mild, 1/2 for medium, and 1 for hot. The good thing about that is I can stretch using them for a long while by freezing the rest.

    1. That’s strange that the chipotle chiles you get are that hot. Although there is a change they are that hot here too and I’m immune to them… My mom swears I burned my taste buds off ages ago 🙂 I freeze my left over chiles in ice cub trays.
