St. Croix, U.S.V.I. and Home Sweet Home….

We made it back from the beautiful Island of St. Croix in the U.S.V.I and instead of sharing a post about food I decided I would give you all a little taste of the Island of St. Croix. I would love to tell you it was an adventure filled trip but honestly we sat on the beach and relaxed almost the whole time and it was much needed….  This was the beach at our hotel.

Our hotel was right on the beach and had a massive screened in porch.

Next to our hotel were some hiking trails through the jungle that lead to another beach and some tide pools. We hiked the 2 miles almost every morning and it was a good workout.

The beach at the end of the hiking trail was all river rocks and it made the coolest sound when the waves washed upon the shore.

Then after our morning hike it was back to the beach for a little more R&R….

The water was so clear I could stand in water up to my shoulders and still see straight to the bottom.IMG_5134

We did venture out one day and took a boat to Buck Island National Park where we did a little snorkeling and of course more sitting on the beach 🙂

Then in the evenings there was more relaxing …..

All in all it was a awesome trip with great friends!!  Now it’s time for me to get back in the kitchen and I’ve got some great recipes coming your way 🙂

  2. Oh my, what a wonderful vacation and beautiful photos to boot! I saw this post in my readerboard after I got back from my own vacation but only just now had the time to view and and savor the beauty of it all. It sounds like we both had a pretty good well-deserved break! 🙂
