Are You Ready For Some Football?!?! Buffalo Chicken Meatballs….

The Football Season officially kickoffs this week and my beloved Dallas Cowboys play Sunday night against the New York Giants! I’m SO EXCITED and I’m ready for my weekends to look like this…

To get this most wonderful time of year started I’m sharing with y’all one of my favorite game day treats…. My spicy Buffalo Chicken Meatballs. These garlicy, spicy, buffalo chicken meatballs are filled with all the flavors of your favorite plate of hot wings and will be the guaranteed touchdown at your next football party!

Buffalo Chicken Meatballs 

Makes 22-24 Meatballs

For the Buffalo Chicken Meatballs

Ingredients: 

1 Pound Ground Chicken

2 Green Onions, minced

1 Small Carrot, grated (about 1/4 Cup)

1 Rib Celery, finely diced (about 1/4 Cup)

2 Cloves Garlic, grated

1/4 Teaspoon Cayenne Pepper

1 Teaspoon Garlic Powder

1 Teaspoon Onion Powder

1/2 Teaspoon Celery Salt

Salt & Black Pepper (to taste)

2 Tablespoon Franks Hot Sauce

1 Cup Panko Bread Crumbs

1 Large Egg

 

For the Garlic Hot Sauce:

Ingredients:

2 Tablespoons Butter

1-2 Large Clove Garlic, grated

1-1/4 Cup Franks Hot Sauce

1 Teaspoon Onion Powder

Directions: 

Add all the above ingredients for the meatballs to a large mixing bowl and mix together with a large fork. (Using a fork keeps you from over mixing or compacting the meat mixture.)  Then allow the mixture to rest for at least 1 hour.

Preheat the oven to 375 degrees.

Add all the ingredients for the garlic hot sauce to a small sauce pan and simmer until thickened, about 7-10 minutes. Pour 1/3 of the garlic hot sauce into the bottom of an oven safe baking dish.

Form the meat into about 2 inch meatballs.

To make life easy I use a 2 inch spring-loaded scoop and then lightly roll them into round meatballs.

Heat a large heavy skillet over medium heat with a good coating of olive oil (about 1/4 cup) and brown the outside of the meatballs in batches.

Add the browned meatballs to the baking dish and pour the remaining hot wing sauce on top.

Bake the meatballs for 15 minutes at 375 then turn them over and bake for 5 more minutes.

Serve with ranch dressing (or blue cheese) celery and carrot sticks.

  1. You might unfollow me after this, but I was raised in Houston and was raised a die-hard Oilers’ fan. The mention of rooting for the Cowboys was immediate expulsion from my grandpa’s house, lol. Of course, they don’t exist now (in my book) in any shape or form. Earl Campbell and Bum Phillips and Go Blue! (OK running away now…) 😉 Great recipe, though! (Please keep me in your readerboard, lol!)
