Comforting Roasted Butternut Squash, Bacon and Sage Risotto

Happy Friday!!
I hope everyone has had a great week. We’ve had record breaking heat here in Texas this past week and it’s been miserable. But relief is on the way next week and I can’t wait. I love the first cold front of the season and one of my favorite things to make on a cold fall day is this Roasted Butternut Squash, Bacon and Sage Risotto.

After a long, hard Monday, I know there is always one thing that I can find comfort in. One thing that will always make me slow down, relax and shake off a bad day.

I know comfort can always be found standing over a big bubbling pot of fragrant risotto. While risotto is easy to make I also know it can seem like bit of a process. Standing over a hot stove, slowly adding the chicken stock and continuously stirring all while waiting for the rice to release all of its starch.

But this is the part that I find to be so relaxing. Making a good risotto is something that can’t be rushed. You must slow down, inhale the wonderful aromas simmering away and just keep stirring.

    1. Thanks Rhonda 🙂 the good news is I’ve got a sweater on today… The bad news is I’m still in shorts. Ah well I’ll take what I can get at this point at least we are not still in the upper 90’s like last week.
