A Mexican Fiesta: Queso Flameado

Happy Cinco De Mayo!!!

It’s not a party until someones brings the queso and the party doesn’t start until you light it on fire!!

Queso Flameado “Flaming Cheese”  is a dish I first had at a hotel in Mexico. I’ll never forget as the waiter rolled out the cart for a table side preparation. First, he tossed the prepared roasted peppers, mushrooms and chorizo in a molten hot molcajete.  Then he added in the cheese and continuously tossed the peppers, mushrooms, chorizo, and cheese in the molcajete until it was all one melted mixture.  For the final touch he poured some tequila over the Queso Flameado and lit it on fire.  We watched in awe while the blue and orange flames danced and sizzled across the cheese anticipating that first bite.  It was delicious!!

While I’m not sure where exactly Queso Flameado originated (somewhere along the Texas – Mexico border near El Paso is what Wikipedia said) I do know it sure is tasty!!

Queso Flameado

Serves 4-6

Ingredients:

4 Cups Fresh Grated Mexican Cheese  (Jack, Oaxaca, Chihuahua, Asadero, or Manchego cheese)*

3/4 Pound Chorizo

1 Roasted Poblano Pepper, diced (peeled, stem and seeds removed)

1/2 Roasted Red Bell Pepper, diced

1 Cups Mushrooms, sliced

1/2 Small Onion, diced

1 Tablespoon Butter

Olive Oil

Corn and Flour Tortillas for serving

*I use a blend of Chihuahua and Manchego cheese.

Directions:

Preheat the broiler and roast the poblano pepper for 5 minutes then flip and roast for another 3-5 until charred black.  Place in a zip top back and let it steam for 15 minutes then remove the skin, stem and seeds.

Reduce the oven temperature to 375 degrees.

Remove the chorizo from its casing and sauté in a little olive oil until cooked through.  Transfer the cooked sausage to a plate lined with paper towels.  Add the slices mushrooms and onions to the same pan and cook until the mushrooms are golden brown and the onion is tender.

Butter an oven safe baking dish. Then add half the cooked sausage, diced roasted peppers, and the sautéed mushrooms and onions.

Top with half the cheese…

Add the remaining sausage, peppers, (reserving a little for the top), mushrooms, onions and cheese.

Cover with foil and bake for 20 minutes until melted and bubbly.  Serve hot with corn and flour tortillas.

Or if you really want to get the Cinco De Mayo party started pour one shot of Tequila (or high proof alcohol) over the hot cheese.

Once the flames have subsided serve the delicious Queso Flameado on hot tortillas 🙂

    1. Thanks Kathryn It’s been a fun week!!! The Queso Flameado is really easy to make just make sure to only pour the tequila on the cheese… But if it helps wearing a welders mask for safety is perfectly acceptable 🙂

  1. Wow Melody – you actually caught a photo of the flame! Very impressive and what a deliciously cheesy dish! 🙂 Do you think it would work with any cheese or does it specifically have to be one of those listed (my son is lactose intolerant so it’s a bit limiting what we can buy). Thanks for sharing at Fiesta Friday – it’s sure to be well received 🙂

      Sorry for the tardiness on the response it’s been a busy month and we’ve been out of town. Queso flameado dish would work well with any good melting cheese not just the ones listed. It was really hard to capture the flame especially since I was trying to take the photo outside.

      Thanks for stopping by. Things are good here in Texas life has just been really busy this past month or so. We’ve been super busy with work and on the weekend we’ve been constantly on the go. But all is well and things are starting to slow down so hopefully there will be more time for cooking. How have you been?

      1. Well, I severely fractured my finger over a month ago and ended up in a crazy traction device that reduced me down to one arm. Barely squeaking by on the cooking front but I’ve managed at least one meal a week! The device comes off Nov. 8th, and that can’t come soon enough! I’m looking forward to seeing you back in the kitchen! xoxo
