Vacation In The Baja: Los Cabos, Mexico

Hi y’all!!  Doug and I have been enjoying a nice relaxing vacation down across the border in one of our favorite places, Los Cabos, Mexico.  We had a wonderful 2-1/2 weeks full of golf, tennis, relaxing on the beach, exploring, reading, and eating so much wonderful food.   Here’s a little sample of our time in the beautiful Baja!

One of the many things that I love about the Los Cabos area of Mexico is the landscape.  The beautiful long golden sand beaches and thundering waves of the sea set against  the backdrop of the prickly arid desert mountians.

Most mornings started with a throw down on the tennis courts but we didn’t keep score for the sake of our marriage.

Then we tried to squeeze in as much golf as possible.

I even almost got a hole in one on a par four!!!  I made my putt and got an Eagle which is still something to be happy about.

Our favorite golf course was Puerto Los Cabos.  Not only do they have a beautiful course but they also have a outdoor kitchen and bar set up every 3-4 holes serving all you can eat tacos and drinks. YUM! Breakfast tacos, shrimp tacos, chicken tacos, pork tacos, beef tacos, scallop tacos, and fish tacos.

This sign on the course made me laugh! I mean what is the point of it??

We frequently visited the nearby town of San Jose Del Cabo for dinner and a little shopping.  San Jose Del Cabo is a beautiful and quite little art town that I just adore!

I came home with just a little bit more Mexican Pottery for my never-ending collection 🙂

We also took a little day trip to Todos Santos for a little visit to the famous Hotel California…

and their tasty fresh papaya margaritas!!

We made sure to fit in PLENTY of beach time at the hotel too!! We stayed at the beautiful Hilton Los Cabos which is located between San Jose Del Cabo and Cabo San Lucas.  The beaches are not only pristine but you can walk for miles down the beach and not see another person.                                                     image

I was able to get in a little reading too!

One of my favorite things to see while we were on the beach was the Flying Rays.  Almost everyday you would see 5-10 of these Mobula Rays gracefully soar out of the water and belly flop back into the ocean.  Then one afternoon the sheltered bay area at the Hilton became filled with over 100 of these flying rays and Doug caught them on video…

For the Fourth of July the Hilton threw an awesome Beach Party with a buffet, live band, fire dancers, and a marshmallow roast.

Before the fireworks we lit Chinese lanterns, made a wish, and sent them off into the heavens. It was a beautiful and amazing experience!

Then it was time for the fireworks… Happy Fourth Of July!

There was so much delicious food consumed over the last two weeks and these were just a few of our favorites!!

Tropical Coconut Ceviche

Mexican Cheese Stuffed Chile Relleno Topped with Mango Salsa and a Black Bean Puree

Mexican Shrimp Cocktail

My favorite restaurant was Flora Farms. Flora Farms is  a beautiful all organic farm to table restaurant (they eve have their own chickens!!) where you literally set outside in the veggie and fruit garden and dine under the stars… It was truly like something out of my dreams and the food was incredible!image

Seared Tuna with Watermelon, Cucumber, and Radish (YUM!)

This was called a Shrimp Bomb and was from the restaurant Tequila located in San Jose.  It’s a fried wonton stuffed with sautéed shrimp, peppers, onions and served on a black bean chipotle puree.  Mmm!! I will definitely be recreating this at home.

Ha! Doug does a great “blue steel” impression but I’ve never been able to catch it on the camera.  Until now!!  image

For our anniversary we had wonderful sunset dinner overlooking the Pacific Ocean at the restaurant El Farallon in Cabo San Lucas.
